Carrageenan Powder is a white to light brown granulated or powdered substance, with a neutral or mild scent and a smooth, sticky texture. Chemically, it is a linear polysaccharide composed of D-galactose and 3,6-anhydro-D-galactose residues. Based on the hemisulfate group’s position on the galactose, carrageenan can be classified into seven types: kappa (k), iota (L), lambda (r), λ-, ξ-, φ-, and θ-carrageenan. Among these, kappa, iota, and lambda types—or their blends—are the most commonly produced and used, with kappa being the most prevalent.

Carrageenan dissolves in water at approximately 80°C, forming a smooth, viscous solution that is clear or slightly cloudy and free-flowing. For easier dispersion, it can first be wetted with ethanol, glycerin, or a saturated sucrose solution. When boiled with 30 parts water for 10 minutes and then cooled, it forms a gel. It enhances viscosity when combined with water and stabilizes emulsions through protein interaction.
